These rich and naturally sweet squares make a healthy conclusion to a meal, or mid-afternoon snack. Unfortunately they got eaten on a teachers’ retreat before a picture could be taken so here are the dates soaking
Ingredients makes 16 squares about a centimetre thick
- 1 cup of deglet nour dried dates
- 1 cup of (gluten-free) porridge oats blended into a flour
- 1/2 cup almond butter (or similar)
- 1/2 cup tahini
- 1 1/2 tablespoons cacao powder
- nice pinch of seasalt
Method
- line and grease an 8 inch square pan
- soak the dates for 10 minutes in not quite boiling water
- drain dates (reserve the liquid) and blend
- blend all the ingredients together, adding a little of the date water if needed, to make a thick paste
- squish evenly into the pan (you may want to press in some seeds or chopped nuts to the surface) and refrigerate for at least an hour
- cut into squares and serve
ps the date water makes a nice chef’s pick me up – sweet!
