raw vegan brownies

These rich and naturally sweet squares make a healthy conclusion to a meal, or mid-afternoon snack. Unfortunately they got eaten on a teachers’ retreat before a picture could be taken so here are the dates soaking

Ingredients makes 16 squares about a centimetre thick

  • 1 cup of deglet nour dried dates
  • 1 cup of (gluten-free) porridge oats blended into a flour
  • 1/2 cup almond butter (or similar)
  • 1/2 cup tahini
  • 1 1/2 tablespoons cacao powder
  • nice pinch of seasalt

Method

  1. line and grease an 8 inch square pan
  2. soak the dates for 10 minutes in not quite boiling water
  3. drain dates (reserve the liquid) and blend
  4. blend all the ingredients together, adding a little of the date water if needed, to make a thick paste
  5. squish evenly into the pan (you may want to press in some seeds or chopped nuts to the surface) and refrigerate for at least an hour
  6. cut into squares and serve

ps the date water makes a nice chef’s pick me up – sweet!
